To reduce acidity in your wine, use Potassium Bicarbonate. Add 3.4 grams per gallon to decrease acidity by 0.1%. The maximum reduction in Total Acid (TA) is 0.25 to 0.3%. This addition increases the concentration of K+ and decreases both acid and tartrate levels. We recommend using it in juice with a pH below 3.0 and a T.A. above 1.0.
After adding Potassium Bicarbonate, it is crucial to cold stabilize the wine to ensure proper precipitation.
